1. soak the tteok in water for 30 minutes until they become slightly soft. after soaking, drain the tteok.

2. heat a large pot and add 1 1/2 cups of water. add the tteok and let it boil.

3. once boiling, add gochugaru (red chili powder) and gochujang (red chili paste) to the pot. stir well.

4. add sugar and sesame oil (if using) to the mixture.

keep stirring until the sauce is evenly distributed and the tteok is tender

5. if you want to add the egg, crack the egg over the surface of the tteokbokki.

and stir gently until the egg is half cooked.

6. finally, add the chopped spring onion and fish cake (if using).

mix well until all the ingredients are combined and cooked.
